1 coffee mug
4 Tbsp. flour
4 Tbsp. sugar
2 Tbsp. cocoa
1 egg
3 Tbsp. milk
3 Tbsp. oil
Small splash of vanilla
3 Tbsp. chocolate chips, optional
(An oversized mug)
Add chips, if using.
Cake will rise over top of mug--do not be alarmed! (Do you SEE? Try two inches above the mug! I was glad I put it on the plate.)
(This can serve two if you want to feel slightly more virtuous.)
This cake is not going to win any beauty prizes, either. I had a small nibble and think that it needs to be chocolatey-er... perhaps more sugar and cocoa, less oil. I only used 2 tbsps of oil, anyway, because I don't like the way it makes things taste, but that's me. This is a surprisingly dense cake, and I topped it with hot fudge sundae sauce for Ethan and Aaron, who ate it ALL.
But they'll eat anything. So there you have it..
